Short Rib empanadas - ARGENTINA'S FAVORITE CUT

A couple of posts ago, we told you all about our vegan and vegetarian empanadas. Today is all about meat empanadas. 

One of Nuchas’ most popular flavors is the Short Rib, and in this post we want to tell you why.

First, there is something about the combination of our classic dough and red wine-braised meat that combines into juicy perfection. In fact, in Argentina, the BBQ capital of the world, short ribs are one of the most popular cuts of meat for barbecuing and one of the most traditional ways of eating barbecues is “al pan” which literally means in bread. So, the combination between short ribs and flaky dough is a win!

Second, the shredded, falling-off the bone texture of our short ribs make each bite especially delicious. It’s like a 5 star meal in the palm of your hand.

Finally, the sourcing of the meat makes this empanada special. Pat Lafrieda is the premiere butcher in New York -  seriously - and we are proud to say that ALL of our meat is sourced from his famous shop. We are convinced that in order to end up with a great, to die for meat empanada, we must start with amazing ingredients and a whole lot of love. If you do some research, you’ll find out that we’re not the only ones saying so, many top NYC restaurants choose Pat for this same reason.

Our Short Rib empanadas, are made using Creekstone Farm’s All Natural Black Angus Beef. This means that the meat we use is certified to contain:

NUCHAS AT THE STREET VENDORS GALA

On Tuesday May 3rd the Street Vendor Gala hosted by the Urban Justice Center took place at Judson Memorial Church on Washington Square Park. It was a really fun night - where vendors mingled, ate, danced and chatted with other fellow street vendors.

The Street Vendor Project is a collaboration of more than 700 NYC street vendors of all kinds that work towards permanent legal changes for fair regulations and equal treatment for New York City’s many street vendors. They hold regular meetings where they plan collective actions for getting street vendors voices heard. Also, they help vendors grow their businesses by linking them with small business training and loans. It’s been an amazing resource for the community and one Nuchas is proud to support!

At the event, there was a full bounty of delicious food provided by many of the street food vendors. Nuchas donated empanadas, Korilla BBQ their delicious Tiger Balls (made with bacon kimchi fried rice, monterey jack cheese, and panko bread crumbs), DUB Pies sent pies,Khao Man Gai NY was also in the house! For dessert, people lined up 30 people deep to indulge in the famous vegan donuts from The Cinnamon Snail. The line was crazy long!

Since it was two days before Cinco de Mayo, a local Mexican group performed a traditional Zapateado dance.

Nuchas was happy to sponsor a table to support this amazing cause that supports us on the street every day. In attendance at the dinner was our Founder, Ariel, our Director of Operations (Quique), our director of Catering (Joanna) our Retail Manager (Kristy), the General Managers from our Truck and our Kiosks (Eiselynn, Jon and Altis).

The New York City street vendors bring an amazing amount of flavor and color to the city. There are as many as 20,000 street vendors in New York City — hot dog vendors, flower vendors, t-shirt vendors, street artists, fancy food trucks, and many others 1.

In 2014, PETA named NYC “the top city for veggie-only eaters” and this year the city is listed #3 in the top 10 vegan friendly cities. New York has always been on the leading edge of innovation when it comes to food. Mix that with a city known for its activism and vanguard chefs and the result is a vibrant vegan and vegetarian destination.

New York is a city of omnivores, vegetarians and vegans with the restaurants and dishes to match...our own empanadas included. Although it’s not so hard to find great vegetarian and vegan options in the city these days, Nuchas wants there to be an empanada option for all of New York’s great eaters. We wanted to be a place where all vegan, vegetarian and meat lovers are welcome and can eat delicious empanadas tailored to their way of life.

At Nuchas half of our offerings are vegan/vegetarian friendly.

Vegetarian empanadas:

Portobello: Simmered Portobello mushrooms, spinach and onions mixed with mozzarella then finished with fresh herbs, in spinach dough.

Spicy Cheese: includes a combination of 8 different cheeses including Reggianito Argentino, Oaxaca and Asiago mixed with jalapeños and sweet caramelized onions. Our classic dough is topped with Parmesan cheese that gives a distinctive texture adding even more cheesy flavor.

Vegan empanadas:

Shiitake curry: Shiitake mushrooms, eggplant, zucchini, potatoes, onions and bell peppers are cooked together with coconut milk and spices. We handmake a dough flecked with turmeric to enhance its Indian influence.

Seitan al Pastor: Our founder’s favorite Nuchas. For those craving for the classic Mexican dish but without the meat, this empanada is the go-to option. Seitan, chipotle, crushed peppers, tomatoes and apple cider vinegar are simmered together. Fresh pineapple chunks are added at the end. The perfect spice to sweet ratio enrobed in our classic dough. 

Sweet empanada:

Vegetarian with a sweet tooth? Worry not!

Apple, cranberry, Nutella: Granny Smith apples, cranberries, pear, Nutella & milk chocolate are lovingly combined in our white almond dough. Enough said!

The best way to know how great these empanadas are is to stop by and try one yourself. Even if our Short Rib is your favorite, we bet you’ll love our vegetarian and vegan options just as much!

On April 8th we celebrated National Empanada day! We wanted to share with New Yorkers our love for empanadas, so we decided to go all in: We sampled mini empanadas throughout the day and we had a special combo meal at a special price for all empanada lovers.  All out locations participated! It was a really fun day.

Not only did we have lots of happy customers, but we were so thrilled to share our freshly baked, yummy empanadas and help spread the love for this on-the-go perfect snack.

Heads up baseball lovers! Nuchas lands at Citi Field

Take me out to the ballgame and buy me some...Nuchas empanadas!

We are super excited to announce our recent partnership with Citi Field Stadium, home of the Mets! Baseball fans will be able to enjoy our empanadas (a.k.a Italian Calzoncinis) inside the stadium all season long. We are so proud to have Nuchas empanadas included in the long tradition of American baseball food.

On Wednesday March 30th, we were invited to the Delta Club at Citi Field Stadium to present our new Nuchas flavors along with the other amazing Mets culinary partners. We had a great time sharing the experience with our old and new friends Pat Lafrieda's Chop House, Arancini Bros, Dan & Johns Wings, Mama’s Coona, Papa Rosso, Tribeca Grill, Fuku, Shake Shack, El Verano Taqueria and so many others! We really want to thank Chef Patrick and all star team chef's for putting together this great day full of delicious foods. Let's just say, David Chang's chicken sandwich lives up to the hype.

We are very happy to be joining the Mets family. Now that we'll be in the heart of Queens, we found it only fitting to create flavors worthy of the borough and the team: Meatball Parm and Italian Sausage Marinara. Mmmmmmm. And if you don’t believe us, just ask Drew Nieporent who tasted them and gave the thumbs up!

Now, whenever you say Game Day, we say Empanada Time!
